Slowly, out of the cobwebs of my mind, a
solution reared its head.
Apple Crumble!
Simple, quick and easy with very basic ingredients.
1 ½ cups plain cake flour or whole
wheat if you prefer
½ teaspoon salt
½ teaspoon fine cinnamon
2 tablespoons honey or sugar
6 tablespoons butter at room temperature
3 apples, peeled, cored and sliced. (Red apples are best
but you can use any apples)
½ cup brown sugar
In a mixing bowl, add flour, salt and butter.
Mix this thoroughly with a fork or your fingertips until
the mixture resembles breadcrumbs. Add more flour if the
texture I too wet.
Now add the brown sugar and mix in.
Peel the apples and cut into quarters. Core
the quarters and then slice thinly.
Grease an ovenproof pyrex or ceramic dish with butter.
Sprinkle a thin layer of the flour mixture on the bottom
o the dish and press flat.
No spread the sliced apple over this.
Sprinkle evenly with fine cinnamon and sugar or honey.
Cover evenly with the remainder of the flour mix.
Bake in a preheated oven at 180 degrees
for 35-40min, or until the crust is golden brown.
If you prefer, you can also enhance the colour and texture
o the crust by grilling on the top shelf or about 45 seconds,
but be careful not to burn it.
Allow
to cool and serve with whipped cream, ice-cream or
vanilla custard.
